A Roscommon farming couple is set to open the country's first ever organic fast food drive-through restaurant in Carrick-On-Shannon.

Justina and Liam Gavin from Drumanilra Farm near Lough Key plan to open the new business this year.

The couple has bought the former site of KFC in Carrick-On-Shannon and had planned to open last year, but due to the pandemic were forced to let staff go and delay the opening.

Justina Gavin, who is originally from the UK, says they want to combine the convenience and affordability of fast food with healthy food:
