Chef Sham spoke to Joe about beef & blue cheese salad with balsamic & strawberries dressing
Ingredients
For the Beef
* 2 sirloin or ribeye steaks
* Salt & black pepper
* 1 tbsp olive oil
Salad
* Mixed greens or rocket/arugula
* 1 cup strawberries, sliced
* 60–80 g blue cheese, crumbled
* ¼ red onion, thinly sliced
* Handful of toasted walnuts or pecans
Warm Strawberry Balsamic Dressing
* 3 strawberries
* 2 tbsp balsamic vinegar
* 3 tbsp olive oil
* 1 tsp honey or 2 tbsp sugar
* Pinch of salt & pepper
* Fresh mint
Method
Make the Dressing
1. Add balsamic vinegar, olive oil, honey (or sugar), salt, and pepper to a small saucepan.
2. Bring gently to a boil for 1–2 minutes until slightly syrupy.
3. Remove from heat.
4. Stir in chopped strawberries and fresh mint at the end so they stay bright and fresh.
Cook the Beef
1. Season steaks generously with salt and black pepper.
2. Heat a skillet until very hot and add olive oil.
3. Sear steaks for 3–4 minutes per side for medium-rare.
4. Rest the beef for 5–10 minutes before slicing thinly.
Assemble
1. Toss greens, red onion, nuts, and sliced strawberries lightly with some dressing.
2. Arrange sliced beef over the salad.
3. Crumble over blue cheese.
4. Spoon over extra warm strawberry balsamic dressing before serving.
