Castlerea native Alan Fitzmaurice will take on some of the best chefs in the world next month when he travels to Abu Dhabi to compete in The Global Chef Challenge.
Alan has worked as executive chef at the Glasshouse Hotel in Sligo for the past 10 years and says cooking is something he wanted to do from a young age.
He spoke to Anne Norris on the Let's Talk show this week about how he began in the industry, the changes that are needed to retain staff today in the hospitality sector, and what he'll be doing in the run up to Abu Dhabi.
